Ingredients

cream cheese softened
8
cups
powdered sugar

teaspoon
mint extract
several drops of green gel food color

heavy whipping cream

semi-sweet chocolate chips
Instructions
Using a standing mixer, cream together the cream cheese and 2 C powdered sugar
Mix until combined the extract and gel food coloring until you get a rich green color
Gradually beat in the remaining powdered sugar
Line a cookie sheet with parchment paper
Using a small ice cream scooper, scoop dough and roll into a ball
Place onto the cookie sheet
Repeat step with remaining dough
Using a rounded teaspoon, make indents into all dough balls
Place cookie sheet into the fridge overnight
Place the chocolate chips into a heatproof bowl
Place the heavy whipping cream into a small pot and bring to a simmer
Pour hot heavy whipping cream over the chocolate chips and allow to sit for a minute
Whisk until smooth
Spoon some chocolate ganache into the cavity of the cookies
Allow to slightly harden for 3 hours before enjoying!
